Meet the Team

Gráinne Ross - Managing Director

A graduate of Communications at DCU, Gráinne’s story has been deeply entwined with Dylan since 2006. A career highlight has been the renovation works done on the lobby, bars and restaurant in 2019, which she believes has shaped the hotel for years to come. Her eagle-eye for great design has seen her assemble a collection of remarkable one-off pieces around the hotel, either sourced directly from wonderful Irish artists and craftsmen or found at auction. She loves weddings at the hotel with  so much love in the air, but her favourite thing is watching her team excel. “Seeing a superstar employee move up through the ranks is fantastic and it’s a great feeling assisting them with their career progression.”


Conor Dillon - General Manager

If Conor’s serendipitous surname wasn’t enough to qualify him for the job as General Manager of Dylan, his impressive CV certainly was. Working in hospitality in Australia, Bermuda and Ireland, including time with Fairmont Hotels and Resorts, the Limerick man joined the Dylan family in 2014, before being promoted to General Manager in 2018. “Dylan was a one-of-a-kind on the Dublin hotel scene when it opened in 2006, and still is to this day. It was somewhere I wanted to work in from early in my career and I am proud to be a part of its story and evolution.”


Mark Bodie - Executive Chef 

From his first kitchen job at 16, Mark fell in love with cooking. Working his way up through some of Ireland’s most celebrated restaurants, the Kildare-man honed his craft in the Michelin-starred L’Ecrivain, before joining the Dylan Hotel in 2014. In 2019, Mark took a break to become the Executive Chef for Belmond Grand Hibernian, Ireland’s first luxury train, before returning to Dylan in 2021. Today he leads our culinary team, and is responsible for everything from The Eddison’s inspired all-day dining menu to our special Tipsy afternoon tea. Modern elegance is Mark’s signature style. 


Michelle Blake - Director of Sales & Marketing

Michelle’s upbeat and inclusive attitude makes her an ideal fit for the Dylan family. Joining the team in 2021 as Sales & Marketing Director, she brings her warmth and trademark energy to all aspects of hotel life. With a CV that includes time at Four Seasons Hotels & Resorts, Michelle comes with exceptional training and an appreciation for luxury hospitality and 5-star service.  When not travelling to represent Dylan internationally, one of the favourite parts of her job is exceeding guest’s expectations. “Sometimes the smallest touches bring the most joy.”


Patrick Sheehan - Food & Beverage Manager

A graduate of The Court of Master Sommeliers in America, Patrick wears his immense knowledge lightly. A favourite with our guests since joining Dylan in 2021, he draws on an international career that includes time at two landmark properties, The Setai Miami Beach and the Ritz-Carlton New York. A natural host, Patrick is kind and extremely knowledgeable. He’s also our go-to man for all things, wine, champagne and cocktails.
